This past weekend was amazing! While Saturday was a little grey, we had a really sunny Sunday and I am starting to see the light at the end of the tunnel. It turned out to be the perfect day to get a little festive in honour of St. Patrick. This year was a little more low key than our regular St.Patrick’s Day Pancake Kegger. It allowed for more time to get creative in the kitchen and perhaps a little less aggressive. I was a little short on green decor so I opted for the gold theme which in my opinion, is never a bad idea. With the help of my friends, we made a Irish themed meal that included two types of quiche, an all-green fruit salad and Irish soda bread topped it all off with either some Baileys and coffee or a delicious mimosa. Since I’m jetting off this weekend and will be travelling on St. Patrick’s Day, I’m happy I was able to squeeze in a little celebration – do you celebrate St. Patrick’s Day?
The best part about the prep work is the cocktail that pairs with it!
The two quiche – ready for the oven! We may have cheated a little and purchased frozen pie shells but we did make this Irish soda bread from scratch – can you believe it?
It was really amazing and easy to make, shout out to the head chef!
Adding a splash of orange of grapefruit juice to our sparkling wine made our drink the pot of gold we were all reaching for on sunny Sunday.
