When Summer rolls around, everything gets lighter. From the clothing, to the layers, colour palettes and thankfully your plate. Not that I’m not a fan of those warm, carby comfort foods that tends to hang around during the cooler months, it’s just that I appreciate the local harvest and fresh vegetables that are readily available in the warmer months. This weekend, I supplemented my usual side of potatoes when having my burger with a lovely Tomato and Beet Salad (recipe here).
It was simple, easy to throw together and delicious – what more could you ask for?
1 pound of small scrubbed beats
2 pounds of tomatoes, preferably heirloom (they just look and taste that much better!)
1 pint of cherry tomatoes
1/4 cup of crumbled feta cheese
1/4 cup of fresh cilantro leaves
1/4 cup of extra-virgin olive oil
Salt and Pepper
