Time for some bubbly – It’s New Year’s Eve! Well, it’s really always time for bubbly but that’s neither here nor there. Andrew and I are ringing in 2015 by dining at a restaurant that has been on our list to try for a while and have left the “after” part completely open so we can decided on how we are feeling – either we head to a party or home to tuck ourselves in and avoid a heavy, lengthy hangover.

There’s a high chance that you are running out to a New Year’s Eve party this evening – but to ensure you don’t go empty handed, I’m sharing a super quick but easy appetizer you can bring with you! Sometimes hors d’oeuvres can be awkward when they are more than bite sized and these are just perfect to pop in mid conversation. I made these for Christmas Eve at my in-laws and they were tasty yet I learned a very important lesson – and it’s kind of obvious and embarrassing BUT Panko is NOT the same thing as bread crumbs. SO I highly recommend that you make these with the correct ingredient which is Panko and I imagine they would be that much more delicious!



Serves eight (16 bites)


  • 8 slices prosciutto
  • 1 10.5 ounce log goat cheese
  • 2 tablespoons assorted herbs (I also used thyme, rosemary, and a hint of basil)
  • Extra herb sprigs, to garnish
  • ½ cup Panko bread crumbs
  • Toothpicks
